Mini Beef Burgers with Cauliflower Rice

Makes 2 Servings

Macros: 385 Cal, Fat 23g, Carbs 11g, Fibre 4g, Protein 34g


Ingredients:

302 grams Extra Lean Ground Beef

1/3 tsp Sea Salt (divided)

2/3 tsp Black Pepper (divided)

2/3 tsp Garlic Powder

2/3 tsp Onion Powder

2/3 tsp Dried Parsley

1 1/3 tbsps Butter

2/3 Yellow Onion (medium, sliced)

2 2/3 cups Cauliflower Rice


Directions:

  1. Add the ground beef, half of the sea salt, half of the black pepper, garlic powder, onion powder, and dried parsley to a bowl. Mix to combine. Form the mixture into even patties, about three inches in diameter, and set aside.

  2. In a large frying pan, heat the butter on medium-high heat. Add the onions and cook until they start to soften, about two to three minutes.

  3. Add the patties in with the onions and cook for seven to eight minutes on each side or until cooked to desired doneness. Be sure to add a splash of water if the onions start to stick. Remove the patties and set them aside.

  4. Add the cauliflower rice, the remaining sea salt, the remaining black pepper and mix to combine. Cook for two to three minutes.

  5. Divide the cauliflower rice and onions evenly between bowls and add the patties. Enjoy!


Notes:

Leftovers: Refrigerate in an airtight container for up to three days.

Serving Size: One serving is equal to approximately one cup of cauliflower rice and onions and two beef patties.
